Chicken Parmigiana at The Shawsy

Chicken Schnitzel with Parmigiana Sauce

Shaws Bay Hotel, Ballina

When I was placing our order, I was a little reluctant to order a chicken schnitzel and pay the extra $3 to have a parmigiana sauce added, but then I remembered that’s exactly what a chicken parmigiana is, despite the arguments over whether or not a slice of ham or bacon should also accompany the chicken.

Our meals were served quickly enough considering the fact that the hotel dining area was quite empty at the time.  Dean ordered a pork dish and it was just as well his meal was small because he was gifted more than half of mine.

Chicken
The schnitzel was larger in circumference than the one I had at the Dicky Beach Surf Club, but was quite thin on one side.  I imagine the schnitzel was a whole breast that had been butterflied (of sorts) and the thinner side was the piece of the breast that is naturally smaller anyway.

I ate from the thicker side of the breast and can say it was tender and succulent.  The crumb was not overcooked and was crisp and crunchy in some places, a little soft in others.

Sauce
The ‘parmigiana’ sauce I paid the extra $3 for was a basic ‘thick’ tomato sauce with too much cheese on top.  The cheese had been melted under a grill but it was just a gooey, greasy mess because there was too much of it on top of the sauce.

Extras
The salad was fresh – I had seen one of the cooks preparing salads when I placed our order and it was good to know the salad had not been produced en masse waiting for the main to be added when ordered.  Even though the salad was fresh, there could have been more of it, one thin wedge of tomato and one thin slice of cucumber is not enough.  However I must say, with the schnitzel being so big, I’m not sure any more salad would fit on the plate.

The chips were rather sad.  Actually, they were very sad.  They were cold, lacking seasoning and shrivelled from sitting far too long under a heat lamp and almost ruined the meal.

Rating Overall

I gave this Chicken Parmigiana 5/10 overall but only because the breast meat was so succulent and flavoursome.

Footnote:  By comparison, the Chicken Parmigiana I had at Dicky Beach was rated at 7½ because, even though the chicken parmigiana itself was exceptional, the salad was hot and spoilt from being on the plate too long and sitting under a heat lamp.
