What I love about this time of year is having a little spare time to do some things that have been forgotten, or perhaps neglected, throughout the year because, well, life keeps us busy.
For me, a little downtime has meant fixing photo libraries, a task that is long overdue.
And while doing so, I’ve had a lovely trip down memory lane, and couldn’t help but smile when I found this photo – a ghost from Christmas 2011.
This was ‘the’ dessert I made for Christmas that year, and let me tell you, it took me three days. The red velvet cake had to be cooked and cooled, the cheesecake filling had to be prepared, then there’s cheesecake frosting, and all of them had to be assembled and allowed to set and then I had to temper the white chocolate and turn it into chocolate curls.
At the time I was working full time, and Christmas was on a Sunday. There would have been no chance of completing this challenge I set myself come Christmas Eve, so I worked on it in the week leading up to Christmas.
At one point I thought “What are you doing!”, but then (suddenly) it was Christmas Day, our meal was eaten, and the Red Velvet Cheesecake came out of the fridge.
It was so good, and I’m so glad I tried my hand at something new.
Granted, my cake didn’t look like the original, but I’m guessing an expert made that one.
