It was in the act of brightening someone else’s day that my day was also brightened today.
What I did was make some delectable chocolates for Dean because, for the first time in well over 35 year, I didn’t buy any chocolate Easter eggs and, I guess I was feeling bad because he loves chocolate so much.

This is an attempt at putting a twist on my White Chocolate Tim Tam Truffles because, these days, Arnott’s make a huge variety of Tim Tams and my truffles could effectively be made using any one of those varieties. I think as long as you compliment the flavour of the biscuits with the appropriate chocolate and sprinkles, the truffle possibilities seem endless.
There’s Murray River Salted Caramel, Murray River Salted Double Choc, Moreton Bay Raspberries and Dark Choc, Dimbulah Mountain Estate Coffee and Choc, and Kensington Pride Mango and Cream.
But these are just the “Crafted Collection” of Tim Tams. Besides White chocolate Tim Tams and the Original I used today, there are also Mint, Chewy Caramel, Double Coat and Dark in the Classic Collection.
Yep, I can’t help but think the possibilities seem endless.

Dean giving me an Apple Watch for Christmas to monitor and track my activity has been the best present ever. It has helped me find ‘me time’ for exercising every day since – even on those days when it feels so tough to do so.
Today marks the 100th day in a row that I’ve done a minimum of 30 minutes of exercise since (and including) Boxing Day 2020 – and that’s something that definitely brightened my day.
More calories! Thank goodness all this is virtual.
