A dear friend gave me this recipe many years ago, and whilst the original was for a large Banana Cake, I’ve adjusted it slightly to make individual muffins.

Banana Muffins

This recipe makes 12 large, cafe-style muffins.
These have been made a few times lately and make a delightful accompaniment to a morning cuppa.
Ingredients
- 2½ cups mashed bananas – approx. 5 large bananas
- 2½ cups self-raising flour
- 1 teaspoon bicarb soda
- 1 cup castor sugar
- 1 cup oil
- 4 large eggs, lightly beaten
- 1 teaspoon vanilla
- 1 cup white chocolate chips (optional)
Directions
- Preheat the oven to 150°C (300°F)
- Prepare the muffin pans. (See note below.)
- Place the mashed bananas, beaten eggs, sugar, oil and vanilla into a bowl and mix together.
- In a separate, larger bowl, sift the flour and soda.
- Make a well in the middle of the flour and add the banana/egg mix.
- Stir until the mixture is incorporated and smooth.
- Add the chocolate chips if using and stir through.
- Divide the mixture between the muffin pans and bake for 45 minutes.
- Turn off the oven and open the oven door, allowing the muffins to cool in the oven for 15- 20 minutes or so.
- Turn the muffins out of the tray and allow them to finish cooling on a baking/cooling rack.
If desired, you can top these with cream cheese icing. Blend the following until smooth and creamy:
- 2 cups icing sugar
- 100 grams cream cheese
- 60 grams butter or margarine
- 1 tablespoon jam – any of your choosing
- 1 teaspoon vanilla
Helpful Hints
- Metal muffin pans should be greased and floured, or you could use muffin liners.
- I use two, large silicon muffin pans and only give them a slight spray with oil.
- They are great for baking jumbo cafe-style muffins, and, the best thing about them is that the cooked muffins just pop right out.
- If you are using smaller muffin pans, please note this recipe will make 24 and you’ll need to adjust the cooking time. I’m unsure of the baking time but would try 25-30 minutes.
- If making a cake, bake for 1½ hours.
- This recipe will make two loaves of Banana Bread. Again, I’m unsure of the baking time but would try 45 minutes. Use a skewer to test if it’s cooked in the middle.
- Uniced muffins can be frozen and thaw well.
- This recipe can be halved to make a smaller quantity.
I like the idea of white chocolate chips! yum!

Oh yes! They have taken these muffins to a whole new level – think raspberry and white chocolate, only it’s banana with the white chocolate – every bit is just divine 🥰

I should have also said, the white chocolate chips negate the need to apply the icing.

I always add chocolate chips… but I will be adding vanilla chocolate chips next time! Yum!
